The Oil
SINGLE STATE OLIVE OIL
Extra Virgin Olive Oil from the La Oliva Abbey

Plantation
Located in Tulebras with planting patterns of 7X5 metres, with traditional pruning and ecological cultivation.

Varieties
Arbequina and Arróniz.

Preparation
Following collection the olives are immediately placed in the mill and thus begins the processes of washing, grounding and physical separation (centrifugation) of the oil from the rest of the components of the olive. Afterwards it is decanted and canned in litre containers.

Chemical analysis
Acidity 0.1º (indicates cleaning and the process quality) if the olive is maltreated or oxidises the acidity increases. Up to 0.4º it is extra virgin olive oil, up to 0.8º it is appropriate for human consumption. Abadía de la Oliva has an acidity of 0.2º.

Tasting note

Colour
Yellow Green. It is an unfiltered oil but clean due to the painstaking decantations that make for perfect conservation.

Nose
Very intense, the freshness of its fruit and green plantain merges with almond notes. It is easily identified with fresh and green vegetables from our lands, particularly tomatoes and artichokes.

Mouth
Very pleasant and silky. Sweet with delicate spicy and bitter notes. Persistent in the mouth with suggestions of tomato, artichoke, cuttings of thistle and almond.
Stands out for its complexity and magnificent balance.
